Every time I make spaghetti I make too much! So an easy solution is to pull out the extra noodles before mixing with your sauce. Rinse it well under cold water and drain. Put it in a Ziploc bag and refrigerate for the next day’s meal!
Quick Stir Fry
Ingredients: 1 bag of slaw mix, Left over noodles 2 -3 cups, Cooked Grilled Chicken Strips about 1.5 cups (mine are frozen in a bag, because I love easy!), 1 – 2 tablespoons Hoisin sauce, 1/4 cup Teriyaki sauce, Soy sauce, 2 eggs, two tablespoons of canola oil (or any oil that can take high heat).
I use a wok, but you could just use a very large skillet.
- Heat the oil for a bit. ( I just drop a piece of cabbage in and when it start bubbling around it, the oil is ready.)
- Add the cabbage and the chicken and stir. Stir often for about 7-10 minutes until chicken is warmed and cabbage is cooked to tender.
- Add noodles and stir.
- Add Hoisin sauce and Teriyaki Sauce, stir well.
- When hot, move all ingredients to side and scramble the eggs in the hollow space you have made in the pan. When the egg is done mix well and serve.
- Add soy sauce to taste.
For us this was 3 servings. It was our entire meal. So judge accordingly and enjoy!!
